Instructions: Put the flour on a board and make a hollow in the centre.
Break in the eggs add the grated lemon rind and a pinch of salt. Sprinkle the sugar and ground almonds over them. Divide the butter into flakes and place round the outside of the flour. Working from the outside inwards knead to a smooth dough. Cover and refrigerate for 30 minutes. Roll out the dough to 3mm thick. Cut out round biscuits 7cm across. Brush the biscuits with beaten egg yolk and scatter chopped almonds over them. Place the biscuits on a greased baking sheet and bake at 200 degrees C/400 degrees F/ gas 6 for 15 minutes. Remove from the baking sheet and cool on a wire rack. Email this Recipe:
