200 gm Pears, peeled, cored and diced
1/2 x Orange, zest removed and diced
70 gm Raisins, chopped
1/2 x Lemon, zest finely chopped , juice of
30 ml Brandy
30 ml Grand Marnier
1 tbl Sugar
50 ml Water
1/2 tsp Ground cinnamon
1/2 tsp Ground cloves
Black pepper
Instructions:
Instructions: In a saucepan over a low to medium heat cook all the ingredients, stirring occasionally until the volume has reduced by a quarter (about 20 minutes).

Allow to cool and set aside until ready to use.
