Instructions: Saute bacon, onion, celery & carrot over moderate heat without browning for 10 min. Stir occasionally. Add beans, potatoes, marrow and stock. (If you want to substitute barley for the rice, add it now.) Simmer covered for 1 1/2 hrs. Add tomatoes and rice (if you didnt use barley). Season and simmer for another 20 minutes. Just berfore serving, add parmesan & parsley. Serve w/addl. cheese at the table.
