Instructions: Soak beans overnight.
Bring beans to boil in 4 cups water, cook 1 hour or til tender. Heat olive oil in pan, add garlic and onion, cook on medium heat til onions are tender, add celery and carrots and cook 3 minutes, add potatoes and squash. Cook 3 minutes, add green beans and spinach or okra, cook 3 minutes. add stock, tomatoes and beans, add bacon and seasonings, simmer 3 hours. Serve piping hot.
