1/2 cup butter
1/2 cup minced onion
2/3 cup flour
1 tsp dry mustard
1 tsp paprika
1/8 tsp cayenne pepper
1 tsp salt
4 cup milk
1 x (12-ounce) can beer
3 cup finely shredded sharp cheddar
Instructions:
Instructions: Melt butter in large kettle; saute onion until soft. Blend in flour, mustard, paprika, cayenne and salt; gradually stir in broth, milk and beer. Cook over medium heat, stirring constantly, until mixture comes to a boil. Let boil, stirring constantly, for 1 minute. Stir in cheese; heat and stir until smooth.

Ladle into soup cups or bowls. Garnish with popcorn.
