1/3 cup walnuts
4 x garlic cloves
3 cup fresh mint leaves
1/2 cup olive oil
Instructions:
Instructions: Finely chop walnuts and garlic in processor. Add mint leaves and chop finely. Add oil and vinegar and blend until pesto is smooth.

Comments: Like most pestos, this can be made ahead and frozen for up to 3 months.

Description: "A change of pace from pine nuts and basil. This pesto goes especially well with grilled chicken."
