1 tbl Dijon mustard
1 tbl Seasoned rice wine vinegar or to taste
1/3 cup Coarsely-chopped fresh mint leaves loosely packed
1/2 cup Peeled and seeded cucumber
1 cup Yogurt
1 tbl Fruity olive oil
Salt to taste
Instructions:
Instructions: Combine all ingredients in a blender or food processor and blend until smooth.

This recipe yields 1 3/4 cup of sauce.
