Instructions: Peel and dmed the cucumbers.
Cut into evensized chunks and steam for I 0 minutes. Puree in a blender for a few minutes then rub through a fine mesh sieve into a bowl. Set the bowl in crushed ice. Finely snip the mint and add it to the puree. Leave to steep for several hours then stir in the cream. Season with salt to taste. This is a perfect summer soup its cool simple flavour perfectly complementing a midsummer evening. The addition of mint subtly enhances the taste of the cucumber and it will delight everyone who tastes it. It is most important that it should be served extremely cold so that is is almost frozen.
