Instructions: Blanch peaches (by first immersing them in hot water for 20 seconds and then in ice water). Peel and halve peaches (removing pits). In a blender, process mint and sugar until chopped. Add vinegar and pepper, process until well combined. Pour mixture into a medium bowl. Add almonds and peach halves. Cover and chill 4 hours. Remove peaches and reserve mint mixture. Distribute salad greens among 8 plates. Top with peach half and Brie wedge. Drizzle with mint mixture. Serve with baguette slices.
