Instructions: Ive already had one package of round steak, and it was excellent. I marinated the meat in red wine, herbs, onion and garlic for 24 hours and then grilled it on my gas grill to medium. The remaining marinade was cooked up with a package of brown gravy mix and a cup of water. It was excellent. The meat was quite tender-which I didnt expect. The best chili I ever made was using ground venison. I did not make any changes to my regular recipe, just used venison instead of hamburger. I would suggest using ground venison as you would hamburger in chili, spaghetti, casseroles, etc. I have also cooked small venison steaks by dredging them in flour and browning in a tiny bit of oil, then adding water to the skillet along with mushrooms and simmer for about 1 to 1 1/2 hours. Season to taste (I only use garlic and S&P). The water and flour turn into a brown gravy that goes great with the mushrooms. Add a green vegetable and youre ready. Wish I could help you use it!
