Amount Ingredient
2 tsp Roasted garlic
1/4 cup Mirin
2 tbl Rice vinegar
2 tbl Vegetable or chicken stock or water
lespoons Yellow or white miso
1/2 cup Olive oil
Fresh lemon juice to taste
Salt to taste
Freshly-ground black pepper to taste
Instructions:
Instructions: Whisk the garlic, mirin, vinegar, stock and miso together to make a smooth paste. Whisk in olive oil and drops of lemon juice to taste. Season to taste with salt, pepper and sugar. Store covered in refrigerator up to 3 days.

This recipe yields about 1 1/4 cups of vinaigrette.
