Instructions: In large container, cover beans with 3 quarts water. Soak overnight
(minimum 12 hours). Rinse and combine in large soup pot with 8 cups water, garlic, lemon juice, honey and bay leaves. Simmer, covered, for 2 hours. Add remaining ingredients and simmer, covered, for 1/2 to 1 hour, depending on size of vegetables. Remove and discard bay leaves before serving. Substitutions on vegetables is encouraged.
