3/4 cup Cold Basic Boiled Grits * see note
1/2 cup Chopped scallions or green onions
1/3 cup Chopped celery
1 lrg Egg
1/4 tsp Salt
1/4 tsp Black pepper, freshly ground
1 tsp Chopped fresh parsley
1 tsp Chopped fresh thyme
(or 1/4 teaspoon dried thyme)
1 tsp Chopped fresh oregano or basil
(or 1/4 teaspoon of either dried)
12 oz Ground beef
12 oz Ground pork
2 tbl Freshly grated Parmesan cheese
Instructions:
Instructions: Preheat the oven to 350 degrees.

Put the grits, scallions, celery, egg, salt, pepper, and herbs in a food processor and run just until well mixed.

Transfer the grits mixture to a mixing bowl and mix in the ground meats, Parmesan, and hot sauce if desired.

Transfer the mixture to a 9- by 5-inch loaf pan and bake until the top is brown and the juices run clear, about 45 minutes. Let the meat loaf cool for at least 10 minutes before serving.

This recipe serves 6 to 8.

Comments: Grits give this meat loaf a smooth texture, which translates into neat and easy slicing either hot or cold. Cold, the texture is more like a French pate.
