Instructions: Get some really gutsy and interesting things in here it could be a mixture of anything cos radicchio gem radishes fennel celery.
Add some fresh herbs such as marjoram basil or parsley. Once youve got alt that together put in some roast tomatoes just to give the salad a bit of an edge. Try to pick perfectly ripe plum or cherry tomatoes leave them whole if they are small otherwise halve them and put them into a bowl. Add a little chopped garlic some chopped fresh thyme a tittle chopped fresh basil some dried oregano which is brilliant a little tug of olive oil plenty of salt and freshly ground black pepper and a touch of dried chilli.(fresh chilli is nice too). Put the contents of the bowl into a roasting tray and roast really quickly just to colour them up and sort of dry them out (normally takes about 15 minutes in a very hot oven). Allow to cool When your salad is ready to be eaten dress it with olive oil and lemon juice dressing (qv olive oil and lemon juice dressing) and scatter the roasted tomatoes over the top.
