50 gm butter
50 gm onion peeled and roughly chopped
2 clv garlic peeled and crushed
15 ml plain flour
125 ml white wine
50 ml milk
225 gm cod or haddock fillet skinned and cut Into cubes
175 gm emmental cheese grated
150 ml double cream
225 gm packet cooked mixed seafood
125 gm watercress finely chopped
1 x salt and freshly ground black pepper
50 gm fresh breadcrumbs
Instructions:
Instructions: Melt the butter in a large saucepan on the simmering plate.

Add the onion and garlic and sautd for 2 to 3 minutes.

Add the flour and cook stirring for 1 minute.

Pour in the wine and milk and bring to the boil stirring all the time.

Add the cod and bring to simmering point.

Cover and cook in the simmering ovenfor 5 to 6 minutes.

Stir in 125g of the grated cheese the cream mixed seafood and watercress. Season with salt and pepper to taste. Spoon into a shallow ovenproof dish.

Mix the breadcrumbs remaining cheese and tortilla chips together and sprinkle over the fish.

Bake in the roasting ovenwith the grid shelf on the second set of runners for 10 to 15 minutes until golden and bubbling and heated through. Serve immediately with leeks or other vegetables of your choice.

Packets of readyprepared mixed seafood are available from most supermarkets. If frozen defrost thoroughly and drain well before use.

A crunchy crushed tortilla and breadcrumb topping is the perfect foil for this creamy seafood gratin. Shredded leeks make an excellent accompaniment.
