1 kg mixture of black mussels, cockles, clams and pipis
50 ml extra virgin olive oil
100 ml dry white wine
1 sm bunch flat-leaf parsley, finely chopped
juice of 2 lemons
extra 200ml extra virgin olive oil
Instructions:
Instructions: Heat a wide barbecue plate (not a grill plate). Put cleaned shellfish in a pile on top. Pour over combined oil and wine, and quickly cover with a stainless steel bowl or domed lid to create a seal. Steam until shells open.

When shells open, remove and put in a bowl. Toss with parsley, juice, extra olive oil and freshly ground pepper. Pile on a serving platter and serve immediately.

Note: If you dont have a flat, wide barbecue plate you can use a heavy-based wide pan on the barbecue or cook top.
