Ingredients:
Amount Ingredient
4 x yellow squash cut 1/2" slices
3 x zucchini cut 1/2" slices
3 x onions quartered
2 x green bell peppers seeded, and
cut into 1 1/2" chunks
1 x yellow bell pepper seeded, and
cut into 1 1/2" chunks
1 x red bell pepper seeded, and
cut into 1 1/2" chunks
2 tbl vegetable oil
1 tsp garlic powder
1 tsp salt
Instructions:
Instructions: Preheat oven to 450 degrees. Coat 2 large rimmed baking sheets with nonstick cooking spray.

In a large bowl, combine all vegetables; toss well. In a small bowl, combine remaining ingredients; mix well. Drizzle over vegetables and toss until well coated.

Lay vegetables in a single layer on the baking sheets. Roast for 20 minutes, or until tender, turning vegetables halfway through the cooking.

This recipe yields 8 servings.
