1 qt small or medium pickle-type cucumbers cut in chunks
2 cup carrots pared & cut in
chunks
2 cup celery cut in chunks
2 cup pickling onions
2 whl sweet red pepper cut in strips
1 whl cauliflower divided into
flowerettes
1 cup pickling salt
4 qt cold water
1/4 cup mustard seed
2 tbl celery seed
1 whl hot red pepper
2 cup sugar
Instructions:
Instructions: Prepare vegetables and place in a large kettle or crock. Dissolve slat in cold water. Pour salt water over vegetables and let stand in cool place, 12 to 18 hours. Place spices, hot pepper, sugar, and vinegar in a large kettle. Boil for 3 minutes. Add vegetables; simmer to heat. Pack in hot sterilized jars, leaving 1/4" head space. Remove air bubbles. Adjust caps. Process 15 minutes in a boiling water bath.
