Instructions: Chill the water and the egg.
Whisk together all the batter ingredients just before dipping the food. The batter should only just be amalgamated so that a few small lumps of flour are still apparent. Get a pan of oil hot. If you are organised enough to have a kitchen thermometer the oil should register about 190 degrees C/375 degrees F. Dip the vegetables into the batter then into the hot oil. Cook them until golden turning from Ume to time with a fork. They will probably bob back up again but keep trying. Cook them for a couple of minutes on each side. Drain on kitchen paper and eat straight away with the lemon wedges. Serves 2 Email this Recipe:
