Instructions: Combine coffee powder and boiling water. Pour over oatmeal; stir to combine. Cover and let stand 20 minutes. Beat butter till creamy.
Gradually add sugars, beating until fluffy. Beat in eggs, one at a time. Blend in vanilla. Add oatmeal mixture; blend well. Sift together flour, soda, salt, and cocoa. Add to creamed mixture. Blend well. Pour batter into greased and floured tube pan. Bake for 50-55 minutes at 350 degrees. Frosting for Mocha Oatmeal Cake: Beat butter until creamy. Add sugar, salt, vanilla, and coffee.
