2 tbl instant coffee powder
1/3 cup boiling water
1 cup oatmeal
3/4 cup butter, softened
1 cup white sugar
1 cup brown sugar, firmly packed
2 x eggs
1/2 tsp vanilla
2 cup flour, sifted
1/4 tsp baking soda
1/4 tsp salt
3 tbl cocoa
----------------- FROSTING ----------------
1/2 tbl butter or margarine, softened
1 cup sugar
1 dsh salt
1/2 tsp vanilla
Instructions:
Instructions: Combine coffee powder and boiling water. Pour over oatmeal; stir to combine. Cover and let stand 20 minutes. Beat butter till creamy.

Gradually add sugars, beating until fluffy. Beat in eggs, one at a time.

Blend in vanilla. Add oatmeal mixture; blend well. Sift together flour, soda, salt, and cocoa. Add to creamed mixture. Blend well. Pour batter into greased and floured tube pan. Bake for 50-55 minutes at 350 degrees.

Frosting for Mocha Oatmeal Cake:
Beat butter until creamy. Add sugar, salt, vanilla, and coffee. Beat until smooth. Drizzle over cake. Nuts may be sprinkled over frosting if desired.
