1 x unflavored gelatin
1/2 cup cold skim milk
1/2 cup skim milk heated to boiling
2 tsp unsweetened cocoa powder
2 tsp instant coffee
1 x 15 oz part skim riccotta cheese
1/2 cup sugar
1/2 tsp cinnamon
1 tsp vanilla
1/4 tsp salt
Instructions:
Instructions: In blender, sprinkle gelatin over cold milk, let stand 2 min

Add hot milk, cocoa, and instant coffee. Process at low

speed til completely dissolved, about 2 min. Add remaining

ingredients and process at high speed until thoroughly

blended, scraping sides once, about 2 min. Pour into crust.

Chill until firm, about 2 hours.
