Instructions: I make mock eggs Benedict with Yves vegetarian Canadian Bacon. I use 1/2 a toasted whole wheat English muffin, a slice of the fake Canadian bacon, a scoop of scrambled Egg Beaters, sometimes a slice of tomato, and top it with a slice of soy cheese (preferably one with hot peppers for added flavor). Then I put it under the broiler until the cheese melts.
Served with fatfree hash-browns, this is one of DHs favorite brunches. Email this Recipe:
