Makes 18 muffins 1 3/4 cups flour 3/4 cup sugar 2 teaspoons baking soda 2 teaspoons cinnamon 1/4 teaspoon salt Cholesterol-free egg substitute equivalent to 4 eggs 1/2 cup canola oil 1/2 cup unsweetened applesauce 2 teaspoon vanilla 2 cups chopped apples, unpeeled 1/2 cup raisins 3/4 cup grated carrots 2 tablespoons chopped pecans Preheat oven to 350 degrees. Spray muffin tin with non-stick spray or line with paper liners. In a large bowl, mix flour, sugar, baking soda, cinnamon and salt. In another bowl, combine egg substitute, oil, applesauce and vanilla. Stir In apples, raisins and carrots. Add to flour mixture and stir until just blended. Spoon batter into muffin tins, filling 2/3 full. Sprinkle with chopped pecans and bake 35 minutes, or until springy to the touch. Let cool 5 minutes, then remove from pan to a rack to cool completely. These freeze well and may be rewarmed before serving. Email this Recipe:
