FOR THE LOAF ----------------
75 gm High fibre bran, (3oz)
175 gm Caster sugar, (6oz)
2 tbl Honey
50 gm Dried apricots, roughly chopped (2oz)
50 gm Dried cherries, (2oz)
5 x 0 g, (2oz) dried blueberries
50 gm Dried cranberries, (2oz)
250 ml Soya milk, (8floz)
175 gm Self-raising flour, (6oz)
----------------- TO DECORATE ----------------
2 tbl Honey
Instructions:
Instructions: Mix the cereal, sugar, honey and fruit in a bowl. Stir in the milk and leave to soak for 1 hour.

Preheat the oven to 180 C, 350 F, Gas Mark 4.

Lightly oil a 900g (2lb) loaf tin and line the base with greaseproof paper.

Sift the flour over the bran mixture and fold in. Spoon into the prepared tin and bake for 1-1 1/2 hours or until firm to the touch.

Remove from the oven and leave to cool in the tin, then turn out onto a cooling rack and leave to cool completely.

Brush the top with honey and decorate with more fruit.

NOTES : A delicious dairy free teabread.
