Instructions: Prepare a medium barbecue fire or preheat a gas grill. Spray the grill rack with cooking oil. Peel the sweet potatoes and cut them lengthwise into slices about 1/8-inch thick.
In a small bowl, stir together the molasses, oil, lemon juice, lemon peel, salt and pepper. Brush the mixture onto both side of the potato slices. Grill the potatoes, turning occasionally, until they are golden brown, crisp on the outside and tender inside, about 10 minutes. This recipe yields 4 servings. Email this Recipe:
