2 cup sugar
1/2 cup Crisco oil (vegetable oil)
4 x eggs
1/4 cup presifted flour
2 tsp salt
2 tsp baking soda
2 tsp cinnamon
3 cup grated raw carrots
1/2 cup chopped walnuts (optional)
----------------- Cream Cheese Frosting: ----------------
1/2 cup cream cheese softened
1/2 cup confectioners sugar
1 x egg white slightly beaten
1/2 tsp vanilla
Instructions:
Instructions: Preheat oven to 300 degrees. Combine sugar, oil, and eggs. Beat at medium speed for 2 minutes. Add dry ingredients and beat at low speed for 1 minute. Stir in the grated carrots and walnuts if you choose to add them. Spread the batter in a greased and floured 13 by 9 inch pan. Bake for 50 to 60 minutes, until toothpick inserted in middle comes out smooth.

Cream Cheese Frosting:
Beat all ingredients together until light and fluffy and of spreading consistency. Frost your cake
