Instructions: Boil 1 cup of rice in 2 1/2 cups water. While it cooks, saute diced ham in a small amount of canola oil. Add thin sliced green onions, stirring occasionally. When the ham & green onions are cooked through add l egg and beat until scrambled. Stir continuously until egg is cooked. Add cooked rice and stir to mix. Add 1 tablespoon of soy sauce. Stir and serve. If I have any leftovers I mix it into some scrambled eggs for a hearty breakfast.
