400 gm Lean pork
400 gm Lean beef
200 gm Green pork back fat or fatty
Pork belly without skin
20 gm Salt
2 x Level tsps finely ground
White pepper
1 tsp Thyme
1 tsp Marjoram
5 x Pieces pimento
1 x Piece finely ground
Instructions:
Instructions: Mince pork, beef and fat through 8mm disc. Mix herbs and spices and sprinkle over meat mass and mix all together by hand for 5-10 mins. Fit funnel to mixer and fill pork casings. Twist into length of choice.
