Coast Grill in Cambridge, Massachustetts. Makes 8 servings
2 lb strip or sirloin steak, cut into 1 1/2 inch cubes
3 tbl olive oil
1/2 tbl McCormick(r) Grill Mates(r) Montreal Steak(r) Seasoning
2 x red bell peppers, cut into 1 1/2 inch squares
1 x red onion, cut into 1 1/2 inch chunks
16 x dried apricots
----------------- Relish: ----------------
1 x tomato, chopped (about 1 cup)
1/4 cup pitted black olive halves
2 tbl olive oil
2 tbl balsamic vinegar
1 tsp minced fresh garlic
1/4 cup julienne-cut fresh basil
1/8 tsp kosher salt
Instructions:
Instructions: 1. Brush steak with olive oil, then sprinkle with Montreal Steak Seasoning.

2. Thread skewers, starting and ending with red pepper, and alternating steak, red onion, red pepper and apricot.

3. Preheat grill or broiler to medium-high. Cook skewers 4-6 minutes per side or until meat is done.

4. In a medium bowl, combine relish ingredients. Serve skewers with relish.
