4 cup boiled rice,cold
1 med onion, chopped
1 cup sliced mushrooms
1/4 cup dried mushrooms(optional)
2 tbl scallions or green onions
2 tbl soy sauce
1/2 tsp salt or to taste
2 tbl chopped parsley
Instructions:
Instructions: Wash and soak dried mushrooms,if used, in hot water for 1/2 hour. Heat oil and stir-fry onions, mushrooms, and scallions. Shred soaked mushrooms, which have been drained(if used) and add. Add rice and stir until thoroughly heated. Add soy sauce. When all is heated,serve topped with parsley.
