1/2 cup unsalted raw or roasted sunflower seeds, plus
2 tbl unsalted raw or roasted sunflower seeds, for topping
1 cup whole-wheat flour
1 cup unbleached all-purpose flour
1 tbl baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1/2 tsp ground nutmeg
1/2 cup packed light brown sugar
1 lrg apple, peeled
cored and finely chopped, (1 cup)
1/2 cup raisins
1/2 cup chopped walnuts
2 lrg egg whites
(or equivalent egg substitute)
1 cup soy milk

Instructions: MAKES 16 OVO

Preheat oven to 400F. Coat 16 standard muffin pan cups with cooking spray.

If using raw sunflower seeds, toast them in skillet over low hear, stirring, 5 minutes. Remove from heat and set aside.

In large bowl, combine both flours, baking powder, baking soda, cinnamon, salt and nutmeg; stir with wooden spoon until blended. Stir in brown sugar until combined. Stir in apple, raisins, walnuts and sunflower seeds.

In medium bowl, whisk together egg whites, then whisk in soy milk and oil. Add all at once to dry ingredients and fold just until evenly moistened. Divide batter evenly among prepared muffin cups. Sprinkle each muffin with some sunflower seeds.

Bake until tops are lightly browned and toothpick inserted in center of muffin comes out clan, about 20 minutes. Transfer pan to wire rack and cool completely before removing muffins from pan.
