Ingredients:

1/2 cup mango peeled and chopped
2 tbl red onion finely chopped
2 tbl mint chopped
2 tbl orange juice
1/2 tsp commercial harissa (see notes)
1/2 lb salmon fillet skinned and cut
crosswise into 4 pieces
1/4 tsp salt
Instructions:
Instructions: Preheat oven to 450F.

Combine first 4 ingredients in a bowl; cover and chill. Spread harissa over both sides of salmon; sprinkle with salt.

Place salmon on a baking sheet coated with cooking spray. Bake for 20 minutes or until the fish flakes easily with tested with a fork.

Serve with mango salsa.

NOTES : Harissa is a hot sauce made with chile peppers, garlic, cumin, coriander, and caraway. Its sold in Middle Eastern markets and specialty food shops.

Serve with Casablanca couscous.
