1 lrg onion chopped
2 clv garlic chopped
2 tsp each ground coriander seeds and cinnamon
3 tsp ground cumin seeds (preferably toasted first)
1 tsp each ground finger ground mace and paprika
1/4 tsp cayenne pepper
Instructions:
Instructions: Put all the ingredients in a processor and briefly blast to a coarse paste.

Will keep for about a week in the fridge.

Using freshly ground spices will give a fuller flavour. The quantities shown will make more than you need for the lamb recipe (qv plum stuffed lamb with orange rosemary and aromatics) but you can use the zest when grilling lamb chops.
