Ingredients:

1 cup chopped onion
1 cup chopped green bell pepper
2 tsp chopped garlic
1/2 tsp ground cumin
1 tsp dried thyme leaves
1/2 tsp crushed red pepper
1 x bay leaf
1 tbl olive oil
1 cup rice
1 x (14 1/(2-ounce) can diced tomatoes with green chilies
1 x (15-ounce) can black beans, or 1 1/2 cups cooked dry-packaged black beans,
rinsed and drained
2 cup water
1 tbl apple cider vinegar
1/2 x to 1 teaspoon salt, optional
Instructions:
Instructions: Saute onion, bell pepper, garlic, cumin, thyme, crushed red pepper and bay leaf in olive oil until onion is tender, about five minutes. Stir in remaining ingredients. Heat to boiling. Reduce heat and simmer, covered, until rice is tender, 20 minutes.
