Ingredients:
Amount Ingredient
1 tbl Olive oil
1 x Red onion, finely sliced
1 x Clove garlic, crushed
1 x 500 gram pac chicken mince
2 tsp Ground cinnamon
1 tsp Ground coriander
1 x 500 gram pac fresh plum tomatoes, roughly chopped or 400g can chopped tomatoes
150 gm Ready to eat dried apricots, (5z)
1 tbl Tomato puree
Instructions:
Instructions: Heat the oil in a large saucepan, add the onion and garlic and cook for 3-4 minutes.

Add the chicken to the onions and cook stirring occasionally for 10 minutes, then add the cinnamon, apricots, coriander, tomatoes and tomato puree. Cover the pan and cook for a further 15 minutes.

Season to taste and serve.

Notes Delicious served with steamed buttered couscous and whole green beans.

NOTES : A healthy combination of chicken, fresh tomatoes and spices.
