Instructions: Put water in large bowl, sprinkle with yeast and stir to dissolve. Add sweetening and dry milk. Add flour, 1 cup at a time, stirring briskly after each addition. Will be quite thick, but stir-able. Now beat 100 times until smooth. Cover with damp towel, set in warm place and let rise till doubled.
After rising, fold in salt and oil. Add flour a little at a time. It will be thick and heavy. Turn onto breadboard and knead 15-20 minutes, with the knowledge that the longer you knead better the bread will be. Oil a big bowl and put dough in, turning once to grease the top. Cover with damp cloth, let rise 1 hour. Punch down 25-30 times. Let rise again for 40 minutes. Knead briefly and divide into 4 pieces. Let sit 5 minutes. Put into oiled loaf pans, or arrange free-form on a baking stone. Cut slits in top. Brush with wash made of egg and milk. Sprinkle with sesame or poppy seeds, if desired. Let rise 20 minutes, then bake at 350 degrees for 50-70 minutes. Remove immediately to wire racks. Yields 4 hearty wheaty delicious loaves. Be careful - you may get addicted! Email this Recipe:
