Instructions: The mountain sheep family, the Dall, Stone, and Bighorn, carry the most coveted of hunters trophies in their curling horns. Members of the ox family like the goat, these animals are much better eating. In fact the Dall, which gets the highest rating, has been likened to the finest English mutton. The Bighorn ram, the largest of the subspecies, ranges from 250 to 300 pounds live weight; the ewes range from 125 to 175. The Stone (or black) is next smaller, with the Dall (or white) the smallest of the three, running around 200 pounds. All sheep have musk glands on all four feet which, if the legs are not removed, should be cut out.

A sheep with a full curl to the horns can be assumed to be an older animal. Some people feel that the creases that ring the horn are a means of counting the years, but there is not much to support the theory scientifically.
