Instructions: Heat the olive oil over medium heat in a large skillet. Brown the chicken for 10 minutes on each side. Add the onion and saute for about 2 minutes; drain excess liquid. In a medium-sized bowl, combine the remaining ingredients and add to the chicken. Reduce the heat to low and simmer for 20 minutes, until the chicken is tender and cooked through.
