Creole Mayonnaise: ----------------
1/2 cup good quality mayonnaise
2 tbl finely chopped chives
2 tsp lemon zest
Red cayenne pepper to taste

1 lrg loaf crusty French bread, about 2 feet long
1 lb thinly sliced deli ham
1 x 2 tomatoes, thinly sliced
1 lb thinly sliced salami
1 lb thinly sliced deli roast beef
1 x red onion, very thinly sliced
Instructions:
Instructions: Creole Mayonnaise:
In a small bowl, mix all ingredients. Cover with plastic wrap and refrigerate until ready to use.

Sandwich:
With a knife, cut lengthwise along the bread splitting it open without slicing all the way through. With your fingers, pull out about a 1"-depth of bread all along both sides of the loaf. Generously spread inside of the bread on both sides with mayonnaise or the Creole mayonnaise. Evenly layer the ham on bottom half and top with the tomato slices, then layer salami and top with onion.

Finally, layer the roast beef and top with lettuce. Close top over filling to completely enclose it, pressing loaf securely shut. To serve, cut into sections.
