Ingredients:

2 tbl olive or canola oil
1 lrg yellow onion, chopped
2 lb mushrooms, stem ends removed,
sliced
2 x tepin chiles, crushed with the
seeds
2 tbl Worchestershire sauce
1 tbl tomato paste
1/2 cup dry red wine
1 tbl fresh lemon juice
4 cup cooked cannellini beans with 1 cup of the
cooking liquid
4 cup water
1 tbl chopped fresh parsley
1/2 tsp freshly ground black pepper
1/2 tsp ground allspice
Instructions:
Instructions: Heat the oil in a large soup pot and saute the onion and sliced mushrooms for 5 minutes. Add the rest of the ingredients, cover, and cook over medium heat for 20 minutes or until the flavors have blended. This is one dish in which a taste test is necessary to see if it is ready to go to the table. Add more chiles or more salt and pepper if needed and serve at once.

SERVING SUGGESTIONS: This is lovely served with a salad of red oak leaf lettuce, mizuna, and romaine and a semi-dry white wine.
