5 tbl butter divided
1/2 lb mushrooms coarsely chopped
1/2 cup finely crushed soda crackers (about 16)
3/4 cup chopped green onions
2 cup shredded Jack cheese
1 cup cottage cheese
3 x eggs
1/4 tsp cayenne pepper
Instructions:
Instructions: Melt 3 tablespoons butter in skillet over medium heat. Saute chopped mushrooms until tender. Remove pan from heat. Stir in cracker crumbs. Press mixture into bottom and sides of greased 9-inch pie plate.

Melt remaining 2 tablespoons butter in skillet and saute green onions quickly. Spread over crust. Sprinkle with Jack cheese.

In blender, combine cottage cheese, eggs and cayenne pepper. Blend well. Turn into mushroom crust. Sprinkle with paprika.

Bake 350 degrees 35 to 40 minutes, or until done. Let stand about 10 minutes before serving. Makes 6-8 servings.
