1/2 tbl olive oil
2 lrg onions
quartered and sliced
2 med garlic cloves, minced
10 oz button or cremini mushrooms, up to 12
thinly sliced
1 lb marinated seitan
cut into bite-size chunks
1 cup frozen baby green peas, thawed
1/4 cup bottled stir-fry sauce, or to taste

This is an excellent choice for big appetites and a warming dish for early winter days. Seitan a tasty food made of wheat gluten, is available in natural food stores

MEAL PLAN: Before starting the stir-fry, make some quick-cooking brown rice.

In large skillet, heat oil over medium heat. Add onions and cook, stirring often, until golden, about 14 minutes. Add garlic and cook, stirring, 1 minute. Add mushrooms, then cover and cook, stirring once or twice, until softened and juices are released, 5 to 7 minutes.

Stir in seitan, peas and stir-fry sauce. Increase heat to medium-high and stir-fry until mixture is heated through, about 5 minutes. Season with pepper.

Serve hot, passing additional stir-fry sauce separately.
