Ingredients:

2 tbl fat
1/2 tsp salt
3 tbl flour
3 x beaten egg yolks
1/2 cup milk
1 cup canned mushroom pieces
1/2 cup mushroom liquor
3 x stiff beaten egg whites
----------------- Medium White Sauce: ----------------
2 tbl butter or fat
2 tbl flour
1 cup milk
Instructions:
Instructions: Make white sauce of fat, flour, liquids and salt. Blend slowly into egg yolks. Add mushrooms. Fold in egg whites. Pour into ungreased casserole. Bake in pan of hot water in moderate oven at 350 for 45 minutes or until mixture doesnt adhere to knife. Serve with shrimp sauce. (Recipe follows.)

Serves 4
Shrimp Sauce

Slice one (4-ounce) package American cheese: add to 2 cups hot Medium White

Sauce (recipe follows): stir until cheese melts. Add 2 pounds fresh, cooked shrimp and 4 hard boiled eggs. Heat through.

Medium White Sauce:
Melt butter, add flour and blend. Add milk and cook over low heat until thick, stirring constantly. Add salt. For a rich sauce use cream or just before serving, stir in 1 well beaten egg yolk mixed with small amount of hot sauce.

Vegetable cooking water may be used as part of the liquid.
