Instructions: Preheat oven to 350 F. In a large skillet, heat oil. Add chicken to skillet.
Cook until just brown. Remove, and drain pan. Arrange chicken in baking casserole. Cook bacon over medium heat for 2 minutes, draining fat. Add mushrooms and cook for 5 minutes. Add wine, tomato paste and tar- ragon. Bring to a boil, stirring constantly. Add cream stirring until it thickens slightly. Add scallions, salt and pepper. Remove from heat. Pour mixture over chicken, cover and bake covered for 25 minutes or until chicken is cooked. Option: Set aside 2 tablespoons of sliced mushrooms and use to garnish dish. Makes 6 servings.
