Instructions: Spray a baking sheet with vegetable spray release. Lay the puff pastry on the sheet. If frozen let stand on the baking sheet at room temperature for about 10 minutes. Preheat oven to 350 degrees. Spread a layer of spinach leaves down the center of the pastry, then layer the mushrooms, cheese, chile, salt, pepper, and basil on top of the spinach. Sprinkle a little vinegar over the chile, top with another layer of spinach leaves, and sprinkle a little more vinegar on the spinach. Fold the pastry over the spinach on one side, then fold the other side of pastry onto the first and secure with toothpicks. Brush with oil and bake in a 350-degree oven for 20 minutes or until the pastry has puffed up and is a nice golden brown.
