Instructions: Wipe and trim 450g of assorted mushrooms (any variety is suitable).
Cut 175g of smoked bacon italian pancetta would be good here into dice about the size of Dolly Mixtures. Chop a handful of parsley not too fine and peel and chop a clove of garlic. Heat a little walnut or olive oil in a saute pan add the mushrooms cut or sliced where necessary bacon garlic a little salt and half the parsley. Cover with a lid and cook on a gentle heat for 20 minutes until the mushrooms are tender. Grind over a little pepper and serve with the pan juices. Serves 2 Email this Recipe:
