Instructions: In a food processor, combine tofu, water, mustard, lemon juice, parmesan cheese, sugar, and salt. Process until smooth. Serve on lettuce topped with mushrooms and croutons.
Notes: Yields: 1 cup (sixteen one tablespoon servings). NOTES : I couldnt taste the tofu in the dressing. I dont use tofu a lot but this dressing was very good. The Dijon mustard adds a slight tang but over all, the dressing is very mild. If you like a dressing thats heavy with vinegar, this dressing is not for you. Email this Recipe:
