Instructions: Put livers through the finest grinder blade. Mix with sausage, parsley, celery leaves, onions, egg, mace, and salt and pepper to taste. Saute 4 strips of bacon until crisp, drain, and crumble fine; add to liver mix with bacon drippings. Pack into a loaf pan and cover top with several more strips of bacon. Bake at 300 degrees for 2 hours; cool on a rack, then chill. Discard bacon strips after unmolding.
