Instructions: Melt 1 cup sugar in small heavy pan over low heat, stirring constantly until melted and caramel colored. In a large heavy pan, at the same time, heat together remaining sugar and cream. Pour caramel slowly into large pan with cream-sugar mixture.
Cook to firm ball stage, 246F, stirring constantly. Remove from heat; add soda, stir vigorously. Add butter; cool 10 minutes. Add vanilla and beat until thick and mixture loses shiny-ness (can use a handheld mixer). Blend in nuts; spread in 9x13 buttered pan. Cool; cut in squares. Makes 3 dozen medium-sized pieces.
