Instructions: Stir together Cheddar cheese and 1 cup yogurt; set aside. Remove inside portion of lettuce head. Spread 1/2 cup of Cheddar cheese mixture inside shell. Layer with 3/4 cup Swiss cheese, spinach, rice, 2 cup cheese mixture, orange segments, 3/4 cup Swiss cheese, remaining cheese mixture, and pecans. Refrigerate 3 hours or until ready to serve. Cut into wedges.
